INGREDIENTS
1/4 stick of salted butter
2 medium sized onions
1 1/2 lb. of zucchini
1 qt. of beef broth
3 tbs. of white, dry wine
1/4 cup of parsley, chopped
1/4 tsp. of turmeric
sour cream as garnish
DIRECTIONS Melt butter in a sauce pan over medium heat
Add in chopped onions and fry them until they become a golden translucent color
Add in zucchini, reduce heat, and cook for 10 mins.
Add in beef broth, wine, turmeric, and parsley and cook for 30 mins. on medium low heat
Mixture can then be blended until the consistency becomes creamy
Serve hot and add sour cream as a garnish
