INGREDIENTS
6 tbs. whole barley kernels
2 cups water ( for barley)
3 tbs. butter
3/4 cup minced onions
1/3 cup minced fresh mint
3 cups yogurt
1 1/2 cup milk
salt and pepper to taste
DIRECTIONS In a small pan bring the water and barley to a boil
Reduce the heat and cover
Simmer for about 50 mins. until barley is tender. ( Water may need to be added during simmering)
Place barley in strainer when tender and rinse with cold water. Let completely drain
In a frying pan, melt butter
Saute onion and mint ( onion should be tender)
Remove from heat
Place yogurt into a bowl and lightly beat until it becomes smooth
Beat milk and stir in barley, onion, salt, mint, and pepper
Chill soup until ready to be served
Really good dish despite the not so appetizing name!!!
