INGREDIENTS
4 skinless breast of chicken filets
1 large orange
2 tbs. dark soy sauce
1 lb. of asparagus spears
DIRECTIONS
Score chicken breasts diagonally and lay in shallow oven-proof dish
Halve the orange and squeeze the juice from one half with soy sauce and pour this mixture over the chicken
Slice remaining half of orange and lay on the chicken breasts
Cover and leave to marinate for several hours ( refrigerated)
Pre-heat oven to 350 degrees
Turn chicken over.
Place in oven and bake for 20 mins. and turn chicken over again for an additional 15 mins. or so
Cook through
While the chicken is still in the oven take asparagus and remove the tough ends.
Pour boiling water in the frying pan, add salt and asparagus.
Water should cover the asparagus completely
Cook for about 2 or 3 mins. until tender
Drain and arrange on warm plates
Add chicken and orange slices
Spoon cooking juices from baking dish over chicken and add fresh ground black pepper
