Serves 4 to 5 cups
INGREDIENTS
1tbs dill (chopped or snipped)
1or 2 tbs. of dry cherries or dry currants
2 tbs cornstarch
2 cups milk
2 cups chicken broth (or vegetable broth)
1 tbs. butter or margarine
3/4 cup of thinly sliced leeks (1/2 cup of sliced green
onion will work)
3 cups of sliced mushrooms
4 oz. Lox
DIRECTIONS
In large saucepan cook mushrooms and leeks in butter over
medium heat until tender
Stir in broth and bring to boil
Meanwhile, combine milk and cornstarch and stir into pan
with mushrooms and leeks over medium heat
mixture should be bubbly and start to thicken up
Cook and stir for a few more minutes
Stir in salmon, cherries, and dill and heat thoroughly
(best to use pepper flaked salmon)
