INGREDIENTS
3 1/2 lb. of loin of pork
4 garlic cloves sliced thinly length wise
1 1/2 tbs. finely chopped fennel
4 cloves
salt and pepper to taste
1 1/4 cup dry white wine
1 1/4 cup water
DIRECTIONS Use small sharp knife to make incisions in the pork loin outwardly to make "pockets"
Place garlic slices in a strainer and rinse with cold water to moisten
Spread out fennel on a saucer and roll the garlic slices to coat them
Place these garlic pieces in the "pork pockets"
Season meat with salt and pepper
Place pork in large oven-proof dish or roasting pan
Pour in white wine and water
Cook in 300 degree pre-heated oven
Basting every 30 mins. or so to avoid drying out
Cook for 2 1/2 to 2 3/4 hours until pork is tender and still quite moist
Slice before serving
