INGREDIENTS
2 to 3 saffron strands
2 egg yolks
1 garlic clove ( crushed)
4 salmon or tilapia steaks
oil for deep frying
salt and pepper to taste
mix of greens
DIRECTIONS
Soak saffron in 1 tbs. of boiling water
Beat mixture in with the egg yolks
Season with garlic, salt, and pepper
Soak fish in mixture and let marinate for 1 hour covered
Heat oil in frying pan until very hot
Fry 1 steak at a time for about 10 mins. until golden brown
Drain each and place on a paper towel to absorb any excess oil
Serve over greens mixture
