INGREDIENTS
8 bay leaves
15 large pitted prunes
1 1/2 lb. pork tenderloin
Pre-heat oven to 400 degrees
DIRECTIONS
Place bay leaves and prunes into a bowl.
Pour 1 1/2 cups boiling water over them and let sit for 15 mins.
Make a 1 inch slit along length of the pork tenderloin, leaving 1 inch uncut on each end
Remove bay leaves and prunes from the water and pat dry
Place prunes in the bottom of the slit and roll the meat and tie tightly at one inch intervals
Sprinkle with salt and pepper on all sides
Place bay leaves under the strings
Spray baking pan with vegetable oil and place roast in pan
Roast for 30 to 35 mins. in a 400 degree oven
Let rest for 5 mins. before slicing and remove bay leaves when strings have been cut
