INGREDIENTS
4 tbs. of light margarine
4 cups of marshmallows ( minis)
1/3 cup of smooth peanut butter
6 cups of cornflakes ( rice krispies or toasted oat cereal can be used as well)
1/4 cup mini chocolate chips
DIRECTIONS
Line a square baking dish with waxed paper
Melt margarine in a heavy sauce pan over medium heat
Add marshmallows and cook, stirring constantly, until melted (roughly 5 or 6 mins)
Stir in peanut butter until smooth
Remove sauce pan from the heat and stir in chocolate chips and cornflakes
Pour into baking dish and press mixture flat with a sheet of waxed paper
Cool for 30 mins and flip over and remove, cooling for an additional 30 mins.
Transfer to a cutting board and peel off the waxed paper.
(IF any problems with removing waxed paper, place in refrigerator to completely cool to remove) NOTE: Parchment paper can be used as well in place of waxed paper.
