INGREDIENTS
7 carrots peeled and grated
4 apples peeled, cored, and grated
1 cup of dried cherries
1/2 cup of pistachio nuts
1/2 cup of oil
1/8 cup orange zest
1 cup of Matza cake meal
4 eggs (lightly beaten)
1/8 cup of fresh lemon juice
1 tsp. of cinnamon
1/2 tsp. of salt
1/2 tsp. ground ginger
1/2 tsp. of ground allspice
DIRECTIONS
Preheat oven to 425 degrees and grease baking pan (9 by
13)
Combine ingredients in a mixing bowl and empty into the
baking pan
Cover with aluminum foil and bake for 20 mins.
Reduce heat in oven to 325 degrees and bake another 45
mins.
Note: During half of this reduced heat time, consistency
should be checked to avoid dryness
