INGREDIENTS 24 small chicken wings
2 tbs. vegetable oil
3 tbs. Hoisin sauce and an additional 1/2 cup of sauce for dipping and sesame seeds to taste ( can be toasted to bring out the flavor)
4 tbs. light soy sauce
2 tbs. dry sherry
4 cloves of garlic ( crushed)
1 small red chili pepper ( seeded and chopped)
3 tbs. peeled and grated fresh ginger
DIRECTIONS
Cut chicken wings in half at the main joint
( wing tips can be discarded or used to make the stock)
With a sharp knife, trim the meat around each joint and push the meat down the joint so that the wing resembles a small chicken leg
Place drumettes in a shallow dish
Combine oil, 3 tbs. of Hoisin sauce, soy, garlic, sherry, chili, and ginger ( making sure to combine well)
Cover chicken, cover, and marinate for 3 hours
Pre-heat oven to 350 degrees
Remove chicken from marinade and place in baking dish
Bake in oven until tender ( 20 to 25 mins. )
Use Hoisin sauce for dipping
