Serves 3 to 4
INGREDIENTS
1/4 cup snipped fresh cilantro
2 tsp. chopped chipotle peppers (or any hot pepper will
do)
1/2 tsp. sugar
1/4 tsp. salt
1 can of diced tomatoes (14 oz.)
1 large onion (finely chopped)
3 cloves of minced garlic
1 tbs. of olive or cooking oil
12 oz. boneless, skinless, chopped chicken breast in
bite-sized pieces
2 cups of chicken broth or 1 can
DIRECTIONS
In a dutch oven or large sauce pan cook onion and garlic
in hot oil over medium heat (roughly 4 or 5 mins.
until tender)
Add in chicken and cook for 3 mins.
Stir in chicken broth, peppers, sugar and salt
Bring to a boil and reduce heat simmering for 12 to 15
mins.
Remove from heat and stir in tomatoes and fresh cilantro
The sugar cuts the sharp taste of the tomatoes
