INGREDIENTS
1 head of Radicchio halved lengthwise and cored
1 head of endive ( core is trimmed slightly and half lengthwise)
2 tbs. olive oil
1 tsp. of thyme
1/4 tsp. of salt
1/2 tsp. of fresh ground black pepper
1/2 tsp. of balsamic vinegar
DIRECTIONS Preheat grill to medium heat and allow coals to become very hot
With a pastry brush, brush sides of Radicchio and Endive with olive oil
Season with thyme, salt, and pepper
Grill vegetables cut side down for 5 mins.
Brush around the top with more olive oil and season as above
Turn the vegetables and grill 2 mins. more
Drizzle with vinegar and serve immediately
A nice alternative to the "traditional" salad for grilling season
