INGREDIENTS
2 very large OR 4 medium eggplants
2 1/2 tsp. Harissa ( tunisian hot relish) H O T
3 tbs. light mayonnaise
Pre-heat oven to 400 degrees
DIRECTIONS
Cook eggplants over open fire for 2 to 3 mins. on each side until skin is charred or blistered
Place on baking sheet and bake for 40 mins.
Cut eggplants in half after baking and allow to cool
Scoop out soft pulp and place in a bowl
Add Harissa and mayonnaise
Mash well and add salt and pepper to taste
* Can add 2 small cloves of garlic pushed through a garlic press for added flavor
* Extra Harissa can be added, BUT only after chilling of the mixture to avoid too much spice
