INGREDIENTS
2 1/2 lbs. of lean chuck roast
2 large sweet potatoes peeled and sliced
1/2 cup of red wine
Fresh chopped thyme, basil, and oregano
Salt and pepper to taste
1 bay leaf
4 or 5 balls of All Spice
2 tbs. olive oil or grape seed oil
Can of chopped tomatoes
DIRECTIONS
Take chopped tomatoes in a bowl and add olive oil
Add in all dry ingredients
In a pyrex baking container add potatoes
On top add chuck roast
Add liquid from the bowl mixture
Cover with parchment and aluminum foil
Place in 325 degree over for 2 3/4 to 3 hours.
