INGREDIENTS
2 oz. butter
4 oz. plain or dark chocolate
1 1/2 tbs. rum
3 egg yolks
2 oz. ground almonds
4 oz. icing sugar (sifted)
1 oz. cocoa powder (sifted)
4 oz. chocolate sprinkles
DIRECTIONS
Melt butter and chocolate in a heavy based pan (stirring
frequently)
Remove from heat and allow to cool
Beat in rum and egg yolks
Gradually add ground almonds and 3 oz. of icing sugar
until thoroughly mixed
place in covered bowl in the refrigerator (approx. 45 mins. to an hour)
Roll the mixture into small balls and roll into remaining
icing sugar, cocoa powder, or sprinkles
Can be served in the small paper cups
