INGREDIENTS
1 cucumber peeled and diced
1 2/3 cup of stock
2/3 cup of tomato juice
1 1/3 cup of lo-fat plain yogurt
4 1/2 oz. of shrimp (roughly chopped)
Tabasco sauce
1 tbs. of fresh mint chopped
Salt and pepper to taste
Ice cubes to serve
Garnish with fresh mint, cucumber slice, and whole shrimp
(alt. to shrimp) crab meat or chicken
(alt. to meat) cucumber to make vegetarian style
DIRECTIONS
Place diced cucumber into blender, mixture should be
smooth after processing
Transfer cucumber to a bowl and stir in stock, tomato,
yogurt, and shrimp
Add Tabasco to taste
Stir in chopped mint
Cover and chill for at least 2 hours
Ladle into bowl and add a few ice cubes and serve with
garnish
