INGREDIENTS
2 boneless chicken breasts (lemon pepper
seasoning)
2 tsp. curry 1/4 cup dried currants (can be
fresh currants as well)
2 scallions (white and green parts sliced)
4 tbs. mayonnaise
Slice or dice chicken (optional)
DIRECTIONS
Mix together and can be served immediately with
pasta, potatoes, any favorite vegetable
Chicken is marinated with lemon pepper seasoning
and baked covered at 350-375 degrees for 35-45
mins. (chicken should be fully cooked/ no pink -
Save juices from chicken as liquid additive to
final mixture)
