INGREDIENTS 1/2 cup granulated sugar
2 tbs water
12 tbs unsalted butter
1 cup light brown sugar
2 eggs lightly beaten
1 1/2 cups self raising flour, sifted
1/8 tsp salt
1/4 cup of chopped walnuts
3 oz. semi-sweet chocolate chopped into pea sized pieces
DIRECTIONS
Heat granulated sugar in a heavy based sauce pan until sugar melts and caramelizes
Swirl pan when the sugar colors and take it off the stove when it becomes dark caramel color
Add water to caramel and avoid splashing because it will be boiling hot....better to do at arm's length
Cream the butter and beat the brown sugar until the mixture is light and fluffy
Gradually add the eggs to the creamed ingredients
Stir in caramel, heating gently to thin if it becomes thick
Sift the flour and salt together and fold into mix, fold the walnuts in and add chocolate
Line the baking dish ( 8 " square with parchment paper ) pour the mix into baking dish. Bake for 30 mins in 350 degree preheated oven. Insert a toothpick in the middle of the pan to check on whether the center is cooked evenly through. It should come out clean. Cool on the rack , turn up side down and peel off paper and discard , cut to squares , triangles or bars.
