INGREDIENTS
3/4 cup plus 1 tbs. sugar
4 egg whites
4 cups shredded unsweetened coconut
1/2 cup dried apricots (cut into quarters)
DIRECTIONS
Preheat oven to 350 degrees
Combine apricots and half a cup of water along with 1 tbs.
sugar into a saucepan over medium heat for about 10 mins.
until tender and about a tablespoon of water is remaining
Transfer to food processor and add remaining sugar, egg
whites, and half a cup of coconut and puree.
After a pureed consistency is achieved, transfer to a bowl
and add remaining coconut and mix together.
The mixture should be able to stick together.
Divide and arrange on baking sheet spoonfuls of the
mixture approx. 1 inch apart and bake for 15 mins. until
tops are brown.
( to achieve moistness, form into a pointed shape or
"haystack" shape)
Note: If using sweetened coconut reduce sugar in
recipe
